So... I downloaded TikTok. I'd be lying if I said I didn't feel like my parents must have felt a few years ago trying to navigate Facebook... only to have their children grow increasingly agitated and complain "what don't you understand, this is so simple!!"
I get it now.
I was just your average mid-twenties gal struggling to comprehend how kids were making millions from posting choreographed dancing videos, when it finally happened... TikTok delivered. At last, my #fyp was showing me something relevant! Food :)
I felt my creative brain flooded with new ideas-- What if I recreate some of the delicious recipes I've been drooling over these past months for the next Plates by Cait project?
This is Part 1 of a series I hope to continue as long as TikTok and their creators keep delivering such drool-worthy content!
Justine_snacks' Blueberry Pancake recipe is unlike any pancake recipe I've ever followed or seen. These are simple and easy to make, delicious, and I'm pretty sure healthy? Is this allowed?
My version didn't come out as perfectly as Justine_snacks, but these are definitely something I will make again.
Recipe by Justine_snacks:
60g oats (about ¾ cup)
100g frozen blueberries (about ½ cup)
1 large egg
1 large egg white
½ tsp baking powder
¼ tsp cinnamon
1 pinch of salt
1 tbsp maple syrup
Blend all your ingredients together. Then use a greased skillet on medium heat to cook pancakes for about 1-2 minutes on each side, they will get slightly brown. Stack ‘em up and serve with your favorite toppings! This makes about 6 pancakes and is a good serving for one hungry person.
