Greek Burgers with Herb-Feta Sauce:

Serves: 4-5 burgers, depending on how big you make them!

Time: 25 minutes

If you can’t find ground lamb, ask the butcher to grind some for you!

Ingredients:

  • 1 cup nonfat plain Greek yogurt

  • ¼ cup crumbled feta cheese

  • 3 tbsp chopped fresh oregano, divided

  • 2 tsp lemon juice

  • ½ tsp salt, divided

  • ½ small red onion (yellow onions also work fine)

  • 1 lb. ground lamb or ground beef

  • 1 egg

  • Your choice of bread—if you want a real Mediterranean experience, you can use pita bread. I usually just use a normal hamburger roll and they taste

Directions:

  1. Preheat grill to medium-high or preheat broiler to high

  2. Mix yogurt, feta, 1 tbsp oregano, lemon zest, lemon juice and ¼ tsp salt in a small bowl.

  3. Finely chop onion, add 1 egg scrambled, and mix with meat in a large bowl with the 2 tbsp oregano and ¼ tbsp salt and pepper.

  4. Form into oval patties, about 4X3 inches

  5. Grill or broil the burgers, turning once, until an instant-read thermometer registers 160°F. 4-6 minutes per side

Serve with your choice of bun, herb-feta sauce, tomatoes, onions, and cucumbers.
